An Easy Chocolate Lava Cake Recipe + Christmas Dessert Workshops

Holiday season brings with itself the opportunity to indulge like no other time, and who doesn’t love gooey chocolate cake? Shradha Agarwalla from The Dessert Cart has shared the recipe of her heavenly chocolate lava cake. She is a home maker, a passionate baker, an avid reader and a big fan of romantic Hindi movie songs; she is a self-taught baker and big time foodie, always struggling to balance between her passion for food and burning it out at the gym!

The baking workshops she conducts evoke very good response and learners come back for more. In the last 18 months, since formally conducting these workshops in Mumbai (and recently in Kolkata), she has trained a lot of foodies to make different types of European styled desserts and breads; she also has learners coming over from nearby cities especially to attend her workshops. Chocolate Lava Cake

Chocolate Lava Cake

50g Butter
70g 53% Cocoa Callebaut Chocolate
1 whole Egg
1 Egg Yolk
50g Sugar
2 tablespoons Flour + a little for dusting
A little Cocoa for dusting
1 teaspoon Vanilla Essence

1. Preheat the oven to 225 C / 450 F. Butter and lightly sprinkle flour and cocoa on two ramekins
2. Melt the chocolate and butter over a double boiler. Beat the egg, yolk and sugar with a whisk or an electric beater until pale yellow and thick
3. Beat together the melted chocolate and butter, it should be quite warm. Pour in the egg mixture, then, quickly beat in the flour, just until combined
4. Divide the batter among the 2 ramekins (At this point, you can refrigerate the desserts for several hours until you are ready to eat, bring to room temperature before baking)
5. Bake the moulds on a tray for 7-8 minutes. The center will be soft, but the sides will be set. Do not over bake, else it will take away the gooeyness of the cake
6. Invert each mould onto a plate and let it sit for 10 seconds
7. Un-mould by lifting one corner of the mould. Serve immediately

1. Black Bottom Cupcakes with Ganache frosting
2. Orange & Carrot Cupcakes with Cream Cheese Frosting
3. Apple & Caramel Cupcake with a drizzle of Caramel
4. Bailey’s & White Chocolate Cupcakes with Bailey’s Frosting

When: Date & Time (3 hours) to be decided based on majority response
Where: Prabhadevi, Near the rear entrance of Siddhivinayak Mandir
Fee: Rs 1800/- per head for each workshop
