Mango Mania: A Tasting Session and A Recipe
Summer arrived a couple weeks ago at the InOnIt office and brought with it fresh, yummy mango desserts by Mumbai’s Love & Cheesecake! We tasted almost every single one of their mango desserts and were literally in mango heaven. You HAVE got to try them.
Our two faves were the Mango’Fe (freshly cut mangoes in an amazing tango with caramel) and the Mango Baked Cheesecake (rich Philadelphia Cheese combined with delicious fresh mango and a crunchy Oreo base). Is your mouth watering yet?
We obviously do not want to deal with the karma of not sharing our spoils with our readers! So we asked Love & Cheesecake to please share a recipe so that you could enjoy yummy mango dessert on a warm summer’s day, wherever you may be (as long as you have access to yummy fresh mangoes). Are we overusing the word “yummy”? We just can’t help it when it comes to the king of fruits.
Mango Cheesecake Recipe
Mascarpone Cheese - 200 gms
UHT Cream (whipped) - 250 gms
Castor Sugar - 50 gms
Milk - 30 gms
Gelatin powder - 8 gms
Chilled Water - 24 ml
Fresh Alphonso Mango (pureed) - 60 gms
Crushed Oreo Cookie (for base) - 150 gms
Butter - 1 tbsp
Diced Mango (for garnish)
Crust: Crush Oreo cookies to make a coarse powder. Add about a table spoon of butter to the cookie crust to give the crust a firm binding. Line the base of the cake tin with the cookie crust.
Cheesecake Mixture: In a pan, warm the milk and sugar slightly. In another bowl, soak gelatin powder in chilled water and leave it to rest. After 10 minutes, melt the gelatin in a microwave till it gets a liquid consistency. Pour the gelatin through a sieve into the milk.
Using a spatula, smooth Mascarpone cheese in a large mixing bowl. Add the sweetened milk to the cheese. Fold in whipped cream till completely smooth and the mixture is without lumps. Add the pureed mango in this mix. Pour this mix into the cake tin and chill for 2 hours. Garnish with diced mangoes. Ta da! Ready to serve.
