The three Master Chefs from Valencia, Spain currently in working at Miro, Svenska Mumbai’s specialty Spanish restaurant, together with Svenska’s culinary team have added a new scientific dimension to its Spanish Food & Wine Festival. They have combined the art of cooking with the science of latest molecular gastronomic cuisine.

The team has added a unique and innovative dimension to the food by treating their patrons with foams, froths and gels based on molecular gastronomy .  The result is “progressive cuisine” that hasn’t been seen in India before, creating flavours, textures, aromas and overall dining experiences that are truly extraordinary.  Some of these fascinating dishes include beetroot foam, green pea gel and agar-agar stabilized serrano ham froth.
