Recipe: Classic Peaches and Cream by Sonali’s Cupcakes

Before we get to the recipe of delicious classic peaches and cream, let us establish that only pure passion can lead one to a sweet path of happiness. Since it’s the season of fresh juicy peaches, we got Sonali to put on her dessert-making hat and give us a recipe that combines the freshness of the fruit with the richness of cream.

Recipe: Classic Peaches and Cream

For the Stewed Peaches

5-6 medium sized peaches

375-400 gms of sugar

1 cup of water

1 stick of cinnamon

For the Cream

100 ml of fresh cream

1 tsp vanilla essence

Method

1. Boil water (1.5 lts) in a deep pan. Immerse peaches in and boil for 2-3 minutes. Remove from heat. Blanche peaches (i.e remove the skin and keep aside halved or sliced).

2. In another pan boil together the sugar and water with the cinnamon for 5 mins to make a delicious simple syrup.

3. Add the blanched peaches and further boil for about 3 to 5 mins.

For the whipped cream:

Beat the cream and vanilla essence with a hand beater, till soft peaks form taking care not to overbeat.

Finally, cool, chill and serve with whipped cream.

For a bit of a twist, you can add a little peach schnapps into every serving!
